The Cristobal red varietals are renowned for their fruity profiles, featuring intense aromas and excellent structure complemented by well-integrated oak notes. The white and rosé varietals exhibit freshness and a balanced acidity on the palate.
Intense and bright purple colours. Fruity and expressive aromas. It is well balanced and harmonious, with tannins that give to this wine a very good structure. Its youth and fruity character highlight its long and persistent flavor.
Vinification
5 months, 80% aged in concrete tanks and 20% aged in American and French oak.
Cold pre-fermentation maceration for 5 days. Subsequent alcoholic fermentation, induced by selected yeasts with controlled temperatures between 25ºC and 28ºC. Daily pump-overs complemented with delestage during fermentation to facilitate the extraction of aromatic compounds and color. Post-fermentation maceration for 5 days.
